This week we bring you a recipe for Eggplant. We know many people have issues when it comes to cooking this veggie. But we are here to let you know its a great and easy to cook item. This recipe comes from our community cook Roz over at our FBNY site.
EGGPLANT DELIGHT
Serves 4 Prep time: 10 mins. Cook time: 15 mins
Ingredients:
3 tablespoons of coconut oil
1 medium eggplant sliced into 1/2 inch rounds
1 medium onion sliced into rings
1/2 cup shredded Cheddar cheese(optional)(We used soy Cheddar cheese)
1/4 teaspoon Spike seasoning
Salt and pepper to taste
Directions:
- Heat oil in a large skillet over medium-high heat
- Add onions saute until browned, 4-5 minutes
- Remove the onion to a bowl
- Place eggplant slices in the hot skillet
- Fry on both sides 2-3 minutes or until browned and tender
- Season with spike, salt and pepper
- When the eggplant is tender top slices with onion and then cover with cheese
- Allow cheese to melt for a few minutes, about 2 minutes, before placing on plates and serving
