ITEM OF THE WEEK: EGGPLANT

This week we bring you a recipe for Eggplant. We know many people have issues when it comes to cooking this veggie. But we are here to let you know its a great and easy to cook item. This recipe comes from our community cook Roz over at our FBNY site.

EGGPLANT DELIGHT

Serves 4 Prep time: 10 mins. Cook time: 15 mins

Ingredients:

  • 3 tablespoons of coconut oil

  • 1 medium eggplant sliced into 1/2 inch rounds

  • 1 medium onion sliced into rings

  • 1/2 cup shredded Cheddar cheese(optional)(We used soy Cheddar cheese)

  • 1/4 teaspoon Spike seasoning

  • Salt and pepper to taste

Directions:

  1. Heat oil in a large skillet over medium-high heat
  2. Add onions saute until browned, 4-5 minutes
  3. Remove the onion to a bowl
  4. Place eggplant slices in the hot skillet
  5. Fry on both sides 2-3 minutes or until browned and tender
  6. Season with spike, salt and pepper
  7. When the eggplant is tender top slices with onion and then cover with cheese
  8. Allow cheese to melt for a few minutes, about 2 minutes, before placing on plates and serving
