This week’s item of the week is Green Tomatoes from Whitworth Farm in Boynton Beach Farm in Florida. The recipe this week is for Green Tomato Po'Boys.
● Baguettes or Rolls
● Cajun Sauce (add creole seasoning or hot sauce to vegan or regular mayonnaise)
● Shredded Romaine lettuce
● Fried Green Tomatoes
● Bacon (or Coconut bacon as shown)*
● Avocado or tomato slices
1. Cut the baguettes into 4 to 6-inch lengths. Split in half lengthwise without cutting through to the other side. Spread the Creole sauce inside the baguette and layer the shredded lettuce, tomatoes and avocado slices on top.
2. Prepare coconut bacon by adding coconut strips to a pan of butter (regular or vegan). Let it brown on both sides and drain on a paper towel. Sprinkle with coconut bacon and serve immediately.*
