Fresh Corn Salad

Yield: 4 to 6 servings
4 sweet cobs of corn
3 green onions, chopped or ½ cup small diced red onion (1 small onion)
A large handful of basil, finely chopped
Juice of 1 lime
1 tablespoon extra virgin olive oil (use more if needed)
1/2 teaspoon Spike seasoning (if you have it in your pantry)
1/4 teaspoon garlic powder
Sea salt and fresh ground peppercorns, to taste
Please note: for a little heat add cayenne pepper or red pepper flakes
Cut the kernels off the corn cobs and put them into a medium-sized salad bowl. Add the green or red onions, basil, lime juice and olive oil and stir to combine.
Add spike seasoning and garlic powder.
Stir gently to combine, then season to taste with salt and pepper.
