Snap Pea Stir-Fry

Oh snap! The perfect munchable snack is at Farm Share this week: sugar snap peas from Mosher Farms in Bouckville, NY! These green beauties are ideal for eating raw as a quick snack or tossing into a stir-fry or summer salad. Their crunchy, sweet flavor make them cool and refreshing. This week our Shareholders at FOCH are in for a real treat because they will get to sample this recipe at the site's cooking demo. 

Cook time: 20 mins

1 tablespoon vegetable oil
1/2 cup diced shallots
3 cups chopped sugar snap peas
2 cups sliced radishes
1/4 cup orange juice
2 tablespoons chopped fresh dill
Salt and pepper to taste
Add any of your favorite veggies or protein 

1. Heat oil in a large pan over medium heat
2. Add shallots and cook until soft, about 3 minutes
3. Add snap peas and cook 3 minutes, add radishes and any of your favorite veggies or protein, and cook 3 minutes more or until everything this thoroughly cooked,stir
4. Add orange juice and dill, salt and pepper to taste
5. Mix well, serve and enjoy
