Chef Louise's Crimini Mushroom Vegan Hash
4 TBS olive oil
1 red bell pepper, diced
1 large onion, medium diced
3 (or more) cloves garlic, minced
5 potatoes, washed and medium diced
Crimini mushroom washed and sliced
2 cups cooked beans (any type, I used extra from my shares)
3 cups bok choi, kale, or any other braising greens, washed and chopped
1 TBS cumin
Mrs. DASH seasoning, salt and pepper to taste
Fresh herb of your choice
Heat the olive oil in a large, heavy skillet over medium-high heat.
Add the pepper, onion, garlic, potato, and mushrooms to the pan, stirring occasionally.
Next, sprinkle in cumin, seasonings, salt and pepper, keep stirring while it cook for the next 10mins.
Add beans, greens of your choice, combine and cook for 5 more minutes.
Sprinkle on chopped herd
