Chef Louise's Cabbage, Beet, and Grape Slaw


2 cups grated or shredded cabbage

1 cup beets, grated

1 cup grapes, cut in half

1 TBS fresh mint, chopped

1 lemon, juiced

 ¼ cup olive oil, salt & pepper to taste.




Combine all slaw ingredients to coat evenly.


Note: The cabbage and the beets can be grated up separately in larger quantities and store in the refrigerator, (up to 7days), for others uses: like stir-fry, smoothies, and salads
