Vegan Southern Collard Greens

Vegan Southern Collard Greens 


  • ½ small yellow onion, diced

  • 3 cloves garlic, minced

  • ⅓ cup apple cider vinegar 

  • 2 cups vegetable broth 

  • 1 teaspoon smoked salt 

  • ½ teaspoon red pepper flakes 

  • 2 lbs collard greens

  • Black pepper


  • Coat a large deep skillet or pot with vegetable oil. 

  • Saute onions over medium heat until almost soft. 

  • Add garlic and cook until both are fragrant (about 2-3 minutes). 

  • Add in vegetable broth and season broth with smoked salt and red pepper flakes.

  • Flavor to taste and add any additional seasonings that you would like

  • Bring to a simmer and reduce heat

  • Add in the collard greens, which will shrink as they cook 

  • Simmer for 1hr to 1.5hr. Do not boil. Add more vegetable broth if needed. 

  • When done, the greens will be dark green, tender and will not have a raw taste. 

  • Enjoy! 

*Tip: Add tomatoes or red peppers if desired.
