Mint Pea Hash


  • 2 cups shelled fresh peas 

  • ½ a garlic clove

  • ¾ cup fine parmesan cheese 

  • ¼ cup fresh mint leaves 

  • ¼ cup olive oil 

  • 2 tablespoons lemon juice 

  • Salt and pepper


  1. Put the garlic, peas, parmesan cheese, and mint in a food processor or blender until it is finely chopped.

  2. Add the olive oil, lemon juice, and process again until a purée forms. Season the purée with salt and pepper to taste. 

  3. Serve as a dip for vegetables or tortilla chips, as a sauce for chicken, or a topping for toast.
